Depends on the gun. I think the GP100 looks best in stainless. Generally blued is better looking.

Good point. I’d put the SP101 in that same group. Some guns beg to be born blue, some Stainless. Occasionally, stuff happens, and a gun that should have been blue comes out of the factory as a stainless model! Gasp! Who’s yo daddy?
