I have never killed a deer and had meaty ribs.
The ribs are terrible...Maybe because the biggest deer i have killed was under 120lbs dressed out.
No rib meat.. or i would have kept it... the fat on the ribs is some funky stuff..
heat does not break it down well.. sticks to the roof of my mouth.. just funky stuff.
May work well for boot water proofing.
I tanned a couple hides and also made rawhide from a hide.. that is handy stuff.
Lot's of buzzards and some hogs and crows to finish the carcass left overs off.. usually gone in short time
