I wonder how many meals she's cooked in her life. Probably thousands and thousands. Even tens of thousands. How many potatoes she's peeled and onions she's chopped.

Wow thanks for posting. We have made that for two nights in a row and love it!
Only thing I changed was instead of hotdogs, I substituted smoked sausage.
Clara has several videos and I plan on trying a few of her other recipes.
She's a hoot, and I like listening to her funny stories of the depression. Like
Catching her neighbor getting ready to fill a grocery bag up with veggies from Claras
garden back in the day.

Its interesting to note that her dad gave a buck for a bag of taters. I wonder how big the bag?
I gave $2.39 for a 10# of russets at the store today. Love the recipe.

My granny made these I liked the soup.
WPA Soup

6 quarts water
2 cups celery, chopped
2 cups onion, chopped
2 cups potatoes, chopped
2 cups smoked sausage, cut into 1-inch pieces
2 to 3 teaspoons butter
Salt and pepper
2 eggs, slightly beaten

In a large pot, bring water to a boil. Add all ingredients except eggs and simmer one hour.
Gently blend in beaten eggs and continue boiling for one minute.

Ritz Cracker Mock Apple Pie

Pastry for two-crust 9-inch pie
36 Ritz Crackers, coarsely broken (about 1¾ cups crumbs)
1¾ cups water
2 cups sugar
2 teaspoons cream of tartar
2 tablespoons lemon juice
Grated peel of one lemon
2 tablespoons margarine or butter
½ teaspoon ground cinnamon
Preheat oven to 425 degrees F. Roll out half the pastry and line a 9-inch pie plate. Place cracker crumbs in prepared crust; set aside. Heat water, sugar and cream of tartar to a boil in saucepan over high heat; simmer for 15 minutes until mixture forms a syrup.
Add lemon juice and peel; cool. Pour syrup over cracker crumbs. Dot with margarine or butter; sprinkle with cinnamon. Roll out remaining pastry; place over pie. Trim, seal and flute edges.
Slit top crust to allow steam to escape. Bake at 425 degrees for 30 to 35 minutes or until crust is crisp and golden. Cool completely.
