What type of tomatoes are you guys using?
I use the red ones.
Seriously. I have used anything from roma, to beefsteak to cherries in salsa. All bring a unique flavor. Romas area little easier as they have far less seeds and that slimey tomato guts than most tomatoes.
Ball puts out a good recipe for canning. so good, it won second place in the jackson county fair a few years ago. i dont have it handy, but its maters, onions, and stuff.

Try this
2 cans Rotel
1 Carton Cherubs (grape tomatoes)
1 small onion
1.5 cups of cilantro or to taste
2 Jalapenos
2 ripe Mangoes
1/4 cup Rice vinegar
1/2 limes juice or to taste
Mix all together in a food processor.. Unique but very good
