First one I ever killed was a young gilt. My father-in-law who had killed them for 20 years told me to cook it outside or I'd be sorry..All I know is I actually tried smoking it with good mesquite wood and I would challenge a person to open the lid of the smoker without gagging..I've watch guys on TV kill them and call them breakfast bacon..all this tells me is they actually haven't cooked one..when they start getting hot they actually smell like strong skunk to me...Not saying there ain't a way to get it done but I sure haven't seen it..I was never able to try a bite simply because of the strong smell.That is what the outfitters keep telling us but we have not had one that will let us cook it in their house yet. It is always funny to see how quick they start backing up when you want to cook it in their oven.
