Slice about 1/2" thick
Soak in buttermilk

Mix 1/2 c of flour, 1/2 c corn starch,
1 tsp each salt, black pepper,
1/4 tsp each onion powder, garlic powder, cayenne pepper (adjust to taste)

Dredge meat in flour mixture, dip back into buttermilk, then back into flour mixture.

Into skillet of bacon grease until golden brown, don't over cook.

Remove meat, drain bacon grease, leaving TBS, add 2 TBS of flour mix. Stir to incorporate grease, brown flour. Add buttermilk, 1 can evaporated milk and 1/2 can of water. Stir constantly until thickens. Pour gravy onto meat.

Alternate

Soak in Spicy Italian Dressing, 2 - 24 hour
Put on grill.

Here's mine. Been making this for years, my kids make it now for their kids. Takes about 3 hours if you take your time and make it with a young'un:

Ingredients
1 Pork Tenderloin
2tsp black pepper
2tsp salt
1tsp garlic powder
2Tbsp olive oil
(mix these 4 in a bowl and spread on tenderloin)

1/3c molasses or syrup
2Tbsp red wine vinegar
1Tbsp soy sauce
3 apples cut in wedges
3 pears cut in wedges
2Tbsp sugar

Preheat oven to 425. Rub salt/pepper/garlic/oil on tenderloin. Coat it up good. Bake tenderloin 35 minutes.
In a pan add molasses, vinegar, and soy sauce and bring to a boil. Simmer about 3 minutes. This is your glaze.
Set aside about 3-4 tablespoons or more for the pears and apples as a coating and topper. Brush this sauce on your tenderloin every 10 minutes and bake about 20 more minutes to let the sauce set on the meat. (total baking time about 1 hour). Remove from oven and let it cool down. Slice it into rounds.

In the pan with the glaze, add about 2Tbsp olive oil, sugar, and the apples, and pears. Stir until they're all coated in sauce. Cover the pan and cook for 3-4 minutes over medium heat until they're tender. Add the glaze you sat aside earlier and stir around. Serve next to the pork and spoon the glaze over everything.
I usually throw some asparagus on there too so the wife's happy, but this is a sweet pork recipe that will cure cancer, change your fortune, and make even the most unattainable women fall for you.
