I don't have the patience to make sauerkraut but I make cabbage and sausages in the crock pot.
Large onion peeled and cut up in chunks thrown in bottom of crock pot.
Pour about 2/3 cup chicken broth over.
Add maybe a pound of sausages (I like andouille), cut into chunks.
Shake some spices on top (I use garlic powder and cajun seasoning).
Then cut up a big head of cabbage into bite size pieces and put on top.
Drizzle about 4 heaping Tablespoons of cider vinegar all over the cabbage.
Cover and cook on low for 4 hours.
Stir everything up and cover again, cook for 30 minutes to an hour until cabbage is tender as you like it.

Forgive me...but gross! My mom made homemade sauerkraut for my dad when I was young and I can still remember the stench 50 years later
My grandparents fermented it in the crawl space under their home. The house reeked of it. Don't like it to this day. Wife loves it on her Ruben Sandwiches.
