If they are REALLY worried about it, they would not allow vendors to sell handgun ammo at the show.
They can only ask you to leave... I always keep my S&W 360 M&P in my front pocket and just forget it. I keep extra ammo in a speed loader, therefore its not loose.

Nope. That would take forever after all people are bring guns, knives, etc to sell.
If you get "made", they can ask you to leave. If you don't leave after that, it could be construed as trespassing.

I just unload the mags at the car and take the empty weapon into the show so that I'm not leaving it in the car...

I understand not leaving a weapon in a vehicle at a gunshow. I wouldn't do it either.
However, at some point, you have to return to your vehicle, with no ammo, unless you bought ammo at the show and loaded it into magazines or speeedloaders just outside the building doors as you were leaving.
