Well, they're not too bad if you season 'em enough. Skin it and eviscerate it and season well. I like a bit of Tony's All Purpose Creole Seasoning till it's salty enough and it should be seasoned well then, add a pinch of Zatarain's Crab boil. The meat has a kind if Chicken/Catfish flavor. Grill it like pork. Don't care much for any Bar-B-Q sauce on it, not even Head Country. Those Snakes are usually big enough to get enough skin to make a belt or a really cool Hat band for your Stetson. Take the skin to a shoe or boot maker that either can tan it or should know someone that can.Ask a cajun.
