How is it dangerous?
I must research it now.

Found this
Ground beef remains the largest source of E. coli outbreaks from beef. But between 2000 and 2009, there were five documented outbreaks of E. coli linked to mechanically tenderized beef in the U.S., which sickened 174 people and killed one. The Centers for Disease Control and Prevention estimates that for every documented case of E. coli, 26 cases are not diagnosed, putting the toll of those five outbreaks at more like 4,500.

I feel my deer meat has been treated better than what you get from the store.
I have not ever had Ecoli I did get salmonella once when I ran away from home and lived in the woods for 2 weeks at the age of 14.
I ate an under cooked alligator snapping turtle I had caught.
I did not make a big fire as I did not want to be found and I normally ate small fish and crawdads and frogs.
That turtle made me give in and go home after 3 days of high fever and puking.
I could not shake it.
