Wow, whats funny is when I'm done most mine looks like it's been ground already and it's takes me 10x that long. Of course if I had a nice big nice butcher table like that guy I could have done it in half his time

the hook helps a bunch of time off especially with pork, the only thing I ever really cut that bad on myself were my thumbs I don't think I have ever seen cutter that doesn't have scared up hands. I think the guy in the video would have been a little bit faster if the camera wasn't there.

Quite certain I would come out with about 4 fingers and half a tallywhacker if I tried that. And like Ksmirk said, I'd like to see him do that with a 12 pack in him!!!

I had a hard time following him he was so fast but I sure wish my knives were that sharp. He cut it clean but did leave meat on the bone. I didn't see him even go after the tenderloins.
