deer meat question

I thawed out an arm roast and noticed a really thin layer of something on the meat. Maybe fat? please excuse my ignorance but what could this be and will it cook off or do I need to remove it?

Silver skin. You could chew it all day. I leave it on my butterflied backstraps steaks. Won't hurt flavor, but I cut it off and chew the meat off kinda like cleaning a rib bone or corn on the cob after its cooked.

As has been said, any cut of deer meat needs to be cleaned of any fat or silver skin. Some you can't remove that is in the grain of the meat, but, just take off the external stuff.
