Deer Snack Sticks/Sausage/Backstrap

I was given a bunch of deer meat by a friend of my wife. It was all harvested and processed last season by her husband who passed a few months ago so I can't really ask him about it.

It was processed at Sallee Meat Processing. I've tried to contact them but their phone appears to be off the hook and they haven't responded to my email.

Do any of you know if they smoke/cook their snack sticks or do they need to be cooked? I thawed a package last night in the fridge and am wanting to smoke them today if that's the right thing to do?!?!

I also have an enormous amount of brats with pepper jack if anyone wants some! Planning to throw a package in the smoker too.

Gonna chicken fry backstraps for dinner tonight.

This is my smoking plan for the sticks and sausages:

120 - 1 hour/no smoke
140 - 2 hours/smoke
180 - Until IT reaches 165

Backstrap:

Cut into strips
Season
Dredge in milk/egg mixture then seasoned flour
Fry in cast iron skillet

Good eats there. Don't know about the snack sticks being cooked or not, but I bet they are. If you cut them to length before cooking, the casings will shrink to 1/2 their former length.
The brats look to be fresh and need some cook time.

Just cut the sticks open and enjoy. You might wind up eating all the sticks in an afternoon. They do our elk processing and make the sticks which are in high demand. I believe Sallee's is only open in the fall to process game. The sticks do not need to be smoked unless you just want to. The brats may not need 2 hours. Backstrap sounds good. I would take some brats!! Send me a pm with your cell#

I have most of my deer processed at Sallees, a little pricey but they do a great job. Can't beat those snack sticks, I rarely get enough and the wife and kid go through them within a month or two. I would take some brats as well if you give some to deerslayer, I have always wanted to try their brats. Thanks and happy eating!

I cut that package open and ate one, it was delicious. I figure whatever is left when my boys get home will disappear pretty fast!
