legs or thighs for us. Wife likes the chicken breast, but It's too dry for me. Since I do the cooking, I make the rules.....lol.

You are cooking the breast to long. Buy a package of the fresh boneless breast. Things are huge so it is pretty easy not to over cook them if you have a good thermometer. You want them to JUST hit 165 and then let them rest a few. I have been known to pull them a little earlier then that. It all depends on the size of the boob. (don't it always)

Try this recipe but go by temp not time. If you want you can use low carb baking mix instead of flour.

I use a thermometer for pretty much all my cooking I'm pretty anal about things being at the right temps. Chicken breasts are pretty much tasteless, only flavored by brining or the breading. Just not a fan of them at all.
Now, a free range chicken is a different story. Great flavor.
