Will have to research it, caraway seed comes to mind but don't quote me.

Sorry to quote but thought you ought to know you got it right - sometimes a little fennel seed, too. Supposedly the caraway seed helps with the occasionally odiferous discharge from sauerkraut aficionados.

Grandma used to have crocks of it in her root cellar. She'd make up different batches with spices. She even made come kimchee style once by accident.
She would fry it up in the pan with home made sausage and mustard. Good Ol' German food.
