One of My Favorite Trout Recipes

I cut the head off, then split them down the belly to their butthole. Then I pull out all the guts. After that I cut a V around the spine so I can pull it out. Then with the fish laid open I fillet the ribs out and trim the fins off. I leave the tails and the dorsal fin on.
