I was at a local fishing lake two days ago, and got into several real nice eating size bluegill. I was a kid the last time I ate perch. My parents would drop me off at the same lake and I'd walk the banks with a little black bug type fly behind me and catch the perch like crazy. Some were only 5" long, but as long as I cleaned them, Mom would cook them. Didn't know anything about filleting back then, so we just scaled them, gutted, and cut the fins, head and tail off. Mom cooked them in bacon grease with no breading. Made the skin Crispy, and it was good as I remember it.
Brought home four of the biggest, so they are going into the skillet tomorrow in bacon grease to see how they turn out.
