I picked up 3 bags of 3 racks of ribs yesterday. I just opened up two of them to season and throw on the smoker and I noticed that the silverskin had already been removed. Now... this isn't something I have found to be common. I usually buy my babybacks at Wal-Mart, and it takes me a few extra minutes per rack to remove this inner membrane, so when doing 6 racks like I just did, it was a major bonus for me! Saved me a good bit of prep time. There were a few spots where there was still a little bit remaining, so I took some time to take those off, but I was pleasantly surprised.
They were $0.01/lb more expensive than Sam's, and I think $0.05/lb more expensive than what I saw at Wal-Mart a little while ago.
Overall, not too shabby, though. They look to be similar quality, weight and thickness to what I get everywhere else. Bottom line is, when it comes to babybacks, I haven't found any place, even the butcher shop (where they're usually quite a bit higher, on the order of 30-50%), to be of any better quality.
