Found out pretty quick that I need a better vegetable peeler. Got them cleaned, sliced, blanched and on sheet pans in the freezer to be vacuum sealed when ready. Just wish the other half liked carrots!:homer:
Try those 1/2 inch carrots just covered in water. Boil until almost your desired likeness , drain 1/2 water and add good amount butter, let melt, add about 1/4 - 1/2 cup brown sugar let simmer a couple minutes.

The key to big onions is variety and planting date. I would recommend a intermediate variety and planting late February or early March for your area. I've always gotten bigger onions planting in ground vs container.
I found thinning the 1015 onions to 4"-5"at around a few weeks or as soon as they start to bulb just a bit. Then using a four prong cultivator to loosen the soil along both sides of the onion rows every week will help produce mostly baseball/softball size onions.

We always went down the row pulling every other one when we wanted green onions early and always had to pull dirt from the middles up on top of the onions to keep them from sunburning but we lived on real sanding soil and every rain would wash it off and have to redo it.

Pulling dirt off the top helps with unrestricted bulbing. I don't worry about sunburn. All they need are the roots in the ground.

Mine don’t look like jalapenos. They are more square.. hope they are jalapeño because I want the heat lol
I didn’t read through the whole thread to see if you got an answer or not but those are ‘cajan belles’. It’s a miniature hot belle pepper. They can get pretty spicy.
