I've made something similar with chicken, but I start by making a roux (flour and oil or butter), cooking it until it gets to a peanut butter color, then add vegetables and chicken and andouille sausage, and finally chicken stock.

I had the La Cosa Rosta and the Grain in my Brain, but the Oysterizer was the tastiest, so I had like 3 or 4 of them. It made for a stompy afternoon at the beach.
I'm not sure if any local spots offer something like this, or if I'd even trust something raw this far inland. I would imagine one or more of the Pearl's locations might have them, if anybody. Fish City Grill might, too, I know they offer some odd oyster dishes (like oyster nachos).

Seafood. Same place they keep the Chinese shrimp is where you'll find the Chinese crawfish.
Frozen seafood... right next to the frozen shrimp. In my WalMart it's a separate frozen case just next to the steaks and such.
