Just to be clear, I'm not going to use it for backyard cooking. Just to smoke pork sausage and hams before going in the freezer. It needs to be large enough for at least 2 slabs of side meat and 2 hams and hocks. Plus temperature below 180°f.

Cookshacks are nice, but to get a bigger one you’ll exceed 1000
Found one at an estate auction. Never used, $250 to get it home. Amazing cooker. Built right here in Ponca City.
For the OP, some of the vertical smokers available at about every box store won't set one back more than a couple hundred dollars, but they typically don't have temperature control.
Haven't been in the electric market for many years, but there has to be someone out there with something your needing.
Pellet grills are the big ticket now and can stay at temps around 160* in the smoke mode. 225* is the lowest heat temp the Pit Boss will go but it stays pretty consistent as long as one keeps the lid shut and relies on the temp probes that have a display on the front. No WiFi required.
