Heading down right now to get some more pork belly (or pork side if they have it). I called Perry's and they are sold out, but the Asian Mart at 31st/129th has some, so I'm gonna go check it out. I might make it to Costco to pick up a Prime brisket point or flat to try to make some pastrami again. Last Christmas the pastrami came out not so good. It needs to both cure and cook a lot longer this time.

But the major hunt for the moment is pork belly/pork side!

I found some sliced belly (about 1/2 - 3/4 in thick) a few weeks ago at Sam's. Sunday I put them in a large fry pan and covered with water. I seasoned with salt, pepper, onion powder, granulated garlic, thyme, rosemary and simmered for about 1 hour. Then I seasoned it up with my favorite barbeque rub and put on the smoker for about 2 hours at about 250. It turned out moist and soft as could be, the fat was almost like butter and tasted GREAT!
