One other consideration if you are going to mount your press to a 3/4" thick surface I'd recommend a strong mount. The edge of the table can flex with a thin top. The strong mount spreads out the force. Another way to fix the problem is to apply another 3/4" layer of material to thick up the top.

A good sturdy alternative to butcher block is to get a sheet of 3/4 " inch treated plywood and have it cut at the store to the dimensions you want and use two layers of it for your bench top. You could glue and screw them together.

Do those boxes have hinges on the upper end such that you can swing the lower end up until they're level with the rafter cross-beams? If so, do you have covers for the boxes to keep dust, dirt, and bugs out of them?

Yes, those four cabinets rotate up and out of the way. For some reason, they never get dusty.

I'm just not a fan of peg boards. It's a personal preference thing. In my shop, my hand tools are organized in drawers or live in these drop-down cabinets (that hide away in the rafters). It's not a snooty thing. I just really love my tools.
