here's my big honking reverse flow smoker in action, 3/8in x 30in diam main cooking area with 1/2in thick firebox. this bad boy is about 1,000lbs

brisket about 6 hours in or not ready yet

temp has dropped to 225f after maintaining 275f at 6 hour for the first load of wood, it's time to add more pecan

Looks great! That cooker will hold the heat for sure.
This thread got me hungry for a brisket. Haven't done one since the beef prices started going up. HOLY CRAP! $6.99 per lb for a brisket flat?
Choice ribeye was $6.89.
I'm guessing the .99 per pound for a full brisket days are over.

Sam's has the best prices for brisket lately ... $2.60lb a month ago, now it's $2.99lb .. reasors is the worst at $4.69lb for freeking brisket which is suppose to be the cheapest cut of meat.

with beef prices coming down, there is NO reason why brisket should more than hambuger pricing.

whole ribeye is $8.99lb at Sam's .. pork butt is $2.20lb .. pork ribs is a bit high at $2.99lb. Aldi's in Broken Arrow has pork ribs at $1.99lb.

pricing is for the last week or so in Tulsa area.

I don't get why the flat is more expensive. The point is more flavorful. Is it a meat to fat ratio thing? The fact that it's trimmed? More popular? And what do they do with all those points? I never see just a point for sale. So many questions. I just get the whole brisket.

Agree 100% that the point has more flavor. The points are ground into burger in butcher shops and grocery stores. I'd bet if you made a special order, they would save some points.

adding a small amount of pecan for the last few hours.. easiest way to start a fire is with a propane torch and a old hair dryer with heat turned off

been waiting all day for this ... final cooking temp of 260f .. temp at grill level is 10f less or 250f.. right at 10 hours .. internal temp at 203f final

yumm .. juicy melt in your mouth goodness!!
