At one time Wild Horse Mountain BBQ south of Sallisaw was the best. The first time I went there was in the mid 70's when the old man ran it. It was literally a dilapidated wooden shack with a big Pepsi sign. A real BBQ Joint. The Q was the best I had ever had and the baked beans were addicting. I also remember driving from Okemah to pick up dinner to bring home, but that's just the 'oilies' did things back in the day.

I was there again about 10 years ago, it had been sold, new fancy building and the same recipes. Just no atmosphere.

Mama and I don't like HEAVY smoked flavor BBQ which is probably one reason why we always grill at home......I swear some places we've tried through the years the meat is so smokey it tastes like it was marinated overnight in liquid smoke and then cooked in the smoker.

Within 50 miles (the closer the better) of Norman where's a BBQ joint that has good BBQ with the actual smoke flavor being on the lighter side ?

Smoke is what makes it BBQ , without the smoke it's just grilled meat

I like a light smoke, too. Too much smoke gives me heartburn. My pellet smokers do a good job, sometimes I want a slight bit more, so I use a smoking tube along with 'em.

Smoke is what makes it BBQ , without the smoke it's just grilled meat

To each their own...

Gotta agree with @saddlebum. Smoke is what makes it all worthwhile to me. But with that said, the kind of wood used matters a lot. Lots of people use mesquite and it's really easy for it to get out of hand. It gets bitter in a hurry, but as long as you don't go overboard (and most do) it can be good too. Pecan, cherry, pear, oak, just about any fruit bearing hardwood is really what you want.

I agree with @Shadowrider, mesquite can get real tangy and easily overpower the meat. I prefer just plain oak hardwood for a light, smoky taste. By the way, @jmike314, what's that big rolled up piece of meat being held together with skewers in the second pic in your post above?
