What is your process for the beets. I canned some this year with a USDA recipe and love beets
I just boil them till cooked , cool down, peel then slice. I use a mandolin to keep thickness consistent. Lay in freeze dryer trays in single layer. Pre freeze then put them in the freeze dryer. Takes about 30 hours to dry.
I used to pickle them with recipe in canning book.

Cool down in water. Ice water will stop the cooking. I'm not really concerned about that for what I'm doing. I just boil them till almost done.

Am I being impatient or does it seem like tomatoes are taking awhile to ripen for you guys? I’ve got about 15-20 on my 3 varieties and they are taking forever to turn red. Had to pull a few romas off that were rotting on the vine.
Mine are still green. Coming along but taking forever! Did get a few cherry tomatoes ready though.
