I've had a lot of people talk smack about how they wouldn't eat a 'boiled' steak. But the put-up turns to shut-up when they eat one... they're the most incredible steaks I've ever cooked. And I've cooked a LOT. And I've eaten steaks at some of the best steakhouses around. Charley's Steakhouse in Orlando, FL comes to mind, ranked the #2 in the country when I was there.

None of these places can outcook me when I buy Prime steaks or dry aged, same as they use. Even getting plain old Choice steaks from WalMart or "top 3% of Choice" from my local butcher come out freaking phenomenal.

A lot of the high-end restaurants use this method also. It almost makes it impossible to overcook your meat.

Get a good quality vacuum sealer well worth it. Remember the vacuum sealer is not just for food. I've sealed my passport, emergency batteries, you name it in the airtight waterproof bags. I will buy the big family packs of meat/whatever and seal them in individual portions. No freezer burn and double or triple the life in the freezer.
