You wouldn't be talking about the reverse sear method? If so, that is an excellent way to cook a steak. I usually smoke at 170* for an hour or so depending on the cut and finish them at 500* for about 5 mins per side, this is on a pellet grill.
Well I followed what I had seen in a TV show.
U put them in the smoker with just enuf heat to start the smoke rollin (set mine on 180) over a pan of Ice.
Then let it go till the smoke about quit. Then seared them in a skillet at medium heat for 1min per side, and then finished up in the broiler for 1.5mins per side at 500degrees.
