Remove the membrane, dry rub with a bit of lemon juice, apple wood smoke 1-2 hours with foil open,
then add KC masterpiece sauce, close foil most of the way, 1-2 hours until they start falling off the bone. :hyper:

By the way, Fire lake grocery in Shawnee has baby back ribs slabs for $1.99 lb.
I just got 3 of them for this weekend :-) Along with a couple of back straps.

And a side box smoker

I would happily host such an event, but I'm in the SW corner of the state so, you all name the place and I'll be there or maybe judge. (I usually just smoke birds, I haven't done it yet but I want to get about 10 cornish hens and give them a try with some mesquite)

For anyone that cares...

I make a boat out of aluminum foil.
Put ribs on boat.
Put "John Henry's Texas Pig Rub" on the ribs. I don't go lightly on em either. Smother them bastards in the rub. Both sides too. Yummy!
Put ribs on Traeger at 275 (I think) for 4 hours (I think).
Put Traeger on Smoke after 4 hours and let ribs smoke for an hour or two.

Eat em up after done cooking.

I may be a little screwed up on my time of letting them cook. I can't remember.

Use John Henry's Texas Pig Rub if you want a little bit of a spice to it. Use John Henry's Texas Pecan Rub if you like sweet ribs.
