I am building a small house myself. Pier and beam style foundation and have some questions about the piers or spread footings.

pier and beam is for disturbed soil or infill.
Best bet is to go with foundation and steam wall or floating slab.....
If you elect to use pier and beam then the concrete piers are usually 5 on center and are 10 inches in diameter and a minimum depth of 4 feet.......I know this because I have a set of plans before me right now for a sun room I am building.....
