Best luck with pie cherries, they grow fast, too. Sweet cherries go into jelly. Lost my big tree to the heat / drought.
Apricot do bloom early and are sensitive to late freeze. Best tree is on south side of house to protect from north winds.

Starting from seed does take a few years to bear fruit, but the seem to be hardier.

Few years ago, '17 or '18, I think, had a mild, wet Spring. Peaches were loaded. Had 2x4s propping up limbs. One limb broke, just as peaches were ready to pick.
Picked the limb and trimmed back to protect tree.
That one limb had 77# of peaches.

When conditions are right, things explode.

Biggest problem with pear and apple is squirrels. They can clean a tree in a day.
