Oh man ... we gotta do better at keeping this thread alive if we want Steve to give us a dedicated place guys!

Ok ... here's the key lime crisps I've been wanting to try. It's what GC calls a "cheater recipe" because it starts with a box mix ...

1 box Krusteaz Key Lime Bars mix
1 cup softened butter (not margarine, you need the real deal)
2 eggs
2 cups flour
1 tsp baking soda
1/2 tsp salt

Preheat oven to 350 F.

In medium bowl, cream together butter and pouch of key lime filling mix from box.
Beat in 2 eggs.
Add 2 cups flour, 1 teaspoon baking soda, 1/2 teaspoon salt, and pouch of graham cracker crust from box.
Mix until dough forms, hand kneading if necessary.
Form dough into balls, and roll in granulated sugar.
Bake 14-16 minutes until edges are golden brown.

Makes 40 3-inch cookies.

This is my reciepe for Texas Caviar. It will easily feed 10 people and can be used as a dip or a bean salad. Personally I triple the jalepeno's, leaving seeds for heat if making it for my homies.

• 2 (15 ounce) cans black beans, rinsed and drained
• 2 (15 ounce) cans pinto beans, rinsed and drained
• 2 (15 ounce) cans white corn, rinsed and drained
• 1 (4 ounce) can chopped green chiles, undrained
• 1 jalapeno chile pepper, seeded and finely chopped (optional)
• 1 red bell pepper - cored, seeded and finely chopped
• 1 green bell pepper - cored, seeded and finely chopped
• 1 small red onion, finely chopped
• 1 bunch cilantro leaves, finely chopped
• 1/2 cup rice vinegar
• 1/2 cup olive oil
• 1/3 cup white sugar
• 1 tablespoon garlic powder
Directions
1. Mix the black beans, pinto beans, white corn, green chiles, jalapeno pepper, red and green bell peppers, red onion, and cilantro together in a large bowl.
2. To make the dressing, stir the rice vinegar, olive oil, sugar, and garlic powder together in a pan. Bring to a boil, then remove from heat, and cool. Pour dressing over bean mixture, and toss to mix evenly.
