Even growing up in Oklahoma, I'd never really been exposed to grits until I went to basic training in Alabama. Whenever we were in the field, we always got a hot breakfast. That breakfast always included grits. Since you are hungry, you eat them. Out of convenience, you add as much stuff to them as you can, simply for the calories. My choice was always to add a small box of sugar coated cornflakes and grape jelly. One of my Drill Sergeants saw me making my grits and stopped me. He warned me to never let anyone off Post see me making grits like that. He said that in the South, grits were like a religion. And like a religion, people would get offended and some even hostile.

I haven't made my grits like that in a very long time. Now I simply add butter and black pepper.

How do you eat your grits?
