Anyone have a good recipe they would be willing to share? I made a batch the other night and my wife says it's too gamey. Looking to spice it up a bit, thanks.

That gamey taste is tough to get rid of. Most often a result of not cooling off the meat fast enough of not aging it in a cool place long enough in my experience.

The only way I've found to get rid of it is to cook it out in a crock pot. Get the chilie recipie of your choice make it, then put it in the crock pot and let it simmer for 3-4 hours. The longer the better.

I have been eating deer for my entire life and have never noticed a gamey taste in any chili. I have always done my own processing though. Cool them down quickly, let them hang a few days unless its over 55 degrees, then quarter and put in cooler. Keep cool until you butcher and wrap.

1 lb of meat, browned and cooked with some onion flakes, salt and pepper. Add 1 can tomato sauce and 1 can ranch style beans. Add chili powder to taste. Simple but good. You can do multiply this to make bigger batches.

I love the taste of venison......that being said, my family does not like the "gamey" taste. The tried and true way in my family to get rid of it is to soak it in milk prior to cooking.
