2 ALARM CHILLI KIT!!

Best IMO. I add a can of hot rotel, can of kidney beans, and a can of ranch style beans. It's so easy to make, I can do it!

Its really hard to go wrong with the 2 Alarm Chili Kit. I used it with wild hog last year when I won our chili cook-off at work for the United Way. As far as the "gamey" taste of venison, I actually prefer it. Reminds me I'm not just eating beef.

Along with the meat and chili seasoning, I put in one green bell pepper chopped up and one large onion chopped up, a can or two or stewed tomatoes, and a can of kidney beans. When I'm eating my chili, I like to put in a little vinegar.

I won 5th place in the Okla state championship chili cookoff with that recipe a couple of year ago. Took the recipe, and did to math to figure out how to feed a hundred people or so. Add a few jalepeno's, bell pepper and more garlic.

Oh Yeah, slipped a little beer into it as well:D

This is exactly what I use. Except I use real onion when I brown the meat and forgo the kidney beans. The ranch style beans are good to go.

Another recipe:

Brown 2.5lbs of meat with seasoned salt and fresh onion.
Add:
2 large cans of ranch style beans
1 can of Rotel
1 can of Mexi-corn
Slow simmer for about 30 minutes

Optional to add another can of diced tomatoes or rotel, use jalepeno ranch style beans instead of regular, etc. Change it up like you like. It's not real chili but it's close and it's a nice change from time to time.

This is what I use with a couple of exceptions. I don't use the corn, I add 2 bottles of dark beer (whatever I have on hand) and I let it simmer in the crock pot most of the day. Deeelish!

That gamey taste is tough to get rid of. Most often a result of not cooling off the meat fast enough of not aging it in a cool place long enough in my experience.

The only way I've found to get rid of it is to cook it out in a crock pot. Get the chilie recipie of your choice make it, then put it in the crock pot and let it simmer for 3-4 hours. The longer the better.

In your experience, how long to do usually age your venison in a cool place?

Have you had success doing this again? I entered a chili cook off when I first moved up here and nobody cared for my chili. I've decided to enter again this year and I'm searching for a new to me recipe.
