I use my Great-Grandmother’s chili recipe and figure if it ain’t broke……
Moved here from, let me correct myself. Escaped and sought political asylum as a So Cal refugee on March 1, 2020. Entered the chili cook-off contest at church and out of 12 entries I took 1st prize. The head deacon at church still won’t let me live it down. “I can’t believe a guy from California thinks he can come hear and win the cook-off.” I go to a great church and if I haven’t said it lately thank you for taking me in. 😬

That was a lot of work. It was pretty good though. Different, but I'd do it again.
Reminds me of the chile Colorado I like from a couple of Mexican food places. Gonna have to give it a try! I assume the "different" part is from the chile flavor as it's not as much tomato as generally used for chili? Close?

I made some enchilada sauce last night but didn't have any dried chiles so not as good as usual.

Yes sir. I also didn't let it simmer enough I think. I gave it 4 hours, but the meat was still a little tuff. I guess I was used to a more traditional tomato and spicy chili.

Well, it looks and sounds great - just need flour tortillas instead of saltines! Wonder if using the crock pot might let it simmer longer even though it calls to use the oven. Now on my list of things to make possibly over Thanksgiving if my wife and her cousin aren't making tamales and have the kitchen tied up. The sauce they use for the pork filling is very similar to your chili recipe. Thanks for posting!

I'll use the crock pot next time. I was thinking the extra smoke flavor would be good, just my temp and time were off some.

I didn't think about tortillas! I'm going to try that
