I got a recipe for mexican cornbread from a guy I worked with years ago. This guy is of Mexican decent, and this was his grandmothers recipe. It is made by layering cornbread dough in an iron skillet, places Jalapeno slices, cooked ground beef, cheese, onions, then covering this layer with the rest of the corn bread dough, and baking. NOT the sweet cornbread, but the regular old corn bread recipe! This makes a complete meal, and is great!

Kinda like my mother-in-law wanting me to cook a beef tenderloin well done. That’s just wrong.
When we firts got married, my in-laws from out of state, came to visit. Wanting to make a good impression, I bought a Prime Rib Roast, I couldn't afford. My wife cooked this with all the fixings, and it looked beautiful! Well a Prime Rib Roast can't be cooked well done all the way through, it's much to big! As it turned out they hated rare meat, so I learned a losson from this, just be what I am, and leave it up to other people, where they like me or not!

@old John the exact same thing happened to me two Christmases ago. I bought a $180 prime rib to treat everyone (visiting wife’s side in Vegas) and it was cooked perfectly. Half the people turned up their noses because there was a little blood on their plate. I told the kids “that ain’t blood that’s just meat juice.” 😂😂 I’ll never do that again. To be honest what offended me wasn’t that they wanted their meat more done. Put it in the micro-zappy for a minute and you’ll be in business, no skin off my nose. It was the way they looked at me with complete disgust. They don’t have to worry, I’ll never cook them a meal again when we go to visit.

I use crawfish to catch real food.
I didn't write the song there meat an taters, so if you have a problem with it you will have to go dig up ole Hank Sr. and tell him.

I know reading comprehsion is probably a 4000 level class in Bugtussle Oklahoma but the dish I posted has nothing to do with crawfish.

Cooked some Costco ribs on my Yoder Smoker pellet grill. Used the 2:2:1 method - on the grate for 2 hours @ 225; wrap in foil and cook for 2 more hours at 225. Unwrap, layer on some sauce if you wish; firm up the bark @225 for another hour. My wife said they were the best ribs she’d ever eaten. It was hard to get them out of the serving dish (kept falling apart). The sauce I used was made in Oklahoma; it’s a family business run by air gun enthusiasts from Davis.

I do the same with a rib roast, then or those who like it well done, I cut a slice off and sear it for them like a steak. Hot flat cast iron griddle over two burners of the outside gas stove. They think I'm a culinary guru and I still get my "red meat" lol

So I'm a burger guy. I like good burgers but generally have to buy out for lunches. I usally get two double cheese burgers for lunch when I do get them. I found out about one I hadn't heard of today. A place called way back burger. They have something on their online menu not available in the store I was told. A 9 patty burger. 25 bucks, but I'm game to give it a shot. I hope its delivered by an EMT with a defibrillator though.

We love those pre-seasoned St Louis style ribs from Costco.
