I'm doing this soon. I make my loaf more of like the shape of a bread loaf and the smoke better accesses more surface of the meat. So its taller and narrower than the pan. Looking forward to this.

Yep, I just set the loaf directly on a piece of foil, on a cookie sheet, slide the foil off the CS onto the grill and the grease can run off the foil onto the drip tray of the Green Mountain. When its done I can drag the foil and loaf back onto the cookie sheet and take it in to rest then slice.I won't use the pan again. I didn't get the smoke all the way through as you explained. My buddy has one of those and cooks fried rice all the time. It's amazing. If I had the room on the patio, I'd get oneNot food.....but the family went and got me this for my 50 minus 1 birthday.
