I am guessing a lot of folks would not consider that a true "Western" due to being too recent - however much I disagree. I think it fits every definition I could apply to it, personally.

I loved My Name is Nobody when I was a kid. Recent faves are Tombstone and The Quick and the Dead. Fringe: I'll second Firefly

I still laugh when I watch this...

Many more but those stick out.

Oh, dang, I forgot Unforgiven. Also a great one!
Admittedly most of mine are older but honorable mention would be
Shane
Rio Bravo
Butch Cassidy & The Sundance Kid
Magnificent 7
Gary Cooper / Grace Kelley where ins a black and white one but I don't remember the name.

Of the newer movies.
Young Guns
Tombstone
Wyatt Earp
Dances With Wolves
Assasination of Jesse James by Robert Ford ( I like this one as far as new westerns go )
Magnificent 7 (remake) not bad at all
Hateful 8
Django Unchained

There was a mini series about the Hatfield and Mccoy's that I was particularly fond of, and Hell on Wheels was worth watching.

Westerns are quite different today then they were in the 50's / 60's / 70's shocker I know
