That's one of the reasons I don't buy prime unless there is a sale and the price is right which seems to be never these days.

I also trim mine down and take most all of it off. There's plenty of fat content throughout the brisket, I never understood this whole "the more fat the better" thing anyway. But the fat cap just keeps the rub and smoke out.
Costco had Prime Ribeyes, bone in for $12.99 per lb yesterday only. That's danged reasonable!

So true that is.

I was in Reasor's Grocery store in Broken Arrow today. They had a large supply of Packer Cut Choice briskets $2.99/lb.

The BBQ enthusiast crowd has driven a lot of things out of whack. Babyback ribs now cost more than St. Louis cut a lot of times. Those use to be the cheap throwaway one, really, years ago. Now they are cutting them with a bunch of loin meat still on them and charging a premium.
