I am experimenting again with something for us diabetics or others watching their carbs.

Low Carb, Sugar Free Cake with Fruit

Ingredients

8 large pastured eggs separated
2 tsp cream of tartar
1/2 cup coconut oil or butter
6 tbsp baking mix Stevia or sweetener of choice.
1/2 cup coconut flour sifted
4 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp salt
Strawberries, blackberries, raspberries, sliced peaches, etc. Berries are lower carb.

Instructions:

Preheat oven to 350°F. In a large bowl combine the egg whites and cream of tartar. Whip with mixer until stiff peaks form. Set aside.

In a separate bowl, just lightly whip the coconut oil or butter with the mixer, then add in the egg yolks and whip together until combined. Add in the Stevia along with the flour and other dry ingredients in the next step. Mix until combined.

Fold the egg whites into the batter starting with a little bit at a time. Combine until the batter is completely mixed. Crush about ¼ cup of fruit and mix in.

Coconut flour bakes up dry so some juice might help too if you prefer a moister cake. Not to much you do not want it soggy.

Line a 9 or 10-inch cake pan or cast iron skillet with parchment paper or oil the pan, Bakers Joy works great but adds a few carbs I think. Place a layer of fruit on the bottom of the pan and pour the batter over. Bake for about 20 to 25 minutes. The cake is done when a toothpick is inserted and comes out clean.

A tiny bit dry, not to sweet, I will be making more.

EDIT: Wife just ate a piece and says it is a lot like pound cake with fruit. She liked it and is not diabetic but does want to try Keto diet. Oh and if you price Coconut flour you might have a small heart attack, but it goes a long way. I bought a 2-1/4 lb jug at Wallyworld for about $6.50 and have made several batches of cookies and a couple of cakes, still have about half the jug left.
