Setting the shoulder back on rifle brass that has a shoulder does not cause hard chambering.. it is actually easier to chamber.
But I like to work the brass as little as possible so I have bolt gun brass separate from my AR brass.
In 3 different .308 rifles I had to set the shoulder 3 different places and size the body a different amount to minimally work the brass. I have 3 different sets of .308 dies all tailored to a specific rifle.
