If you haven't tried it, the food at Tacoville is very good - simple but good mexican/texmex. I went there last night and got a huge combo burrito and a soda and left full and spent less than $5. You will likely question your safety when you first pull into the parking lot lol, but its worth it. Just carry while there as I did. They are gun friendly.

Roast and potatoes from the slow cooker. 10 hours and well worth the wait.
I've done something similar.

I cut raw taters in about 2" slices, lined the bottom of the crockpot with 'em, then cut the roast in 3 pieces (salted and garlic powdered on all sides) and put those on top (smothering with onion slices doesn't hurt). No water added. Works for beef or pork.

Might fine eatin' ... :drunk2:

I like to make a dish I call Cajun cookup. I slice up red onions, bell peppers, rough chop potatoes and add a bunch of garlic and Tony Chachere's Cajun seasoning. I coat it all with a little olive or vegetable oil, toss in sliced polska kielbasa, sometimes sliced chicken breasts (or thighs, which are better), and sometimes large scrimps. Put it all in a large roasting pan and cook it in the oven. It is amazing. I'll have to take some pics next time.

Actually, I think the next time I'll wait and add the peppers and onions a little bit later, because they tend to get a bit overcooked and mushy by the time the potatoes are fully cooked. But zomg is it good.

Not a fan of cooked red onions. Yellow and white, good to go.
That being said, had some pickled red onions on a meat/cheese/ veggies/ appetizer today that was pretty good. Going to play with that to see if a quick pickle works or a traditional is required
