In the early 90’s, I worked at a feed mill in downtown Waco, and there was a little chicken joint just down the street. They had the best chicken livers I’ve ever put in my mouth, but one of the truck drivers used to order “chicken butts”. Which is the greasy portion of skin right over the butt, and he ate the dang things every day.
