I picked up my meat from the processor the other day. Now it's in the freezer just beggin to be cooked. What's your favorite recipe/method for enjoying this Oklahoma favorite?

I'm a simple man and just like a nice grilled steak myself. However I'm up to try anything that sounds like it might taste good. What rules at your house or deer camp?

If you like to grill and wanna keep it simple: Marinade backstrap chunks in Claudes Marinade for a couple of hours, wrap in bacon, toothpick it and grill it.

Steaks same marinade with a bit of spice of your liking. Grill bout 5 min on each side for thin cuts maybe 7 min. The biggest mistake people make when grillin venison is overcooking. Its very lean and cooks fast if you overcook it'll be like boot leather.

Deer chili. I can of tomato sauce and one can of ranch style beans per lb of deer meat. Fry the meat with some onion in it and salt and pepper. Put the drained meat in a crock pot or pan with the tomato sauce and the beans and then add chili powder to taste. You can add jalepeno and other stuff as you desire.

I always cut the back strap off the dear before I send it to the processor. I cut them in 1 in thick circle steaks and wrap the perimeter in bacon, and then individually freeze them in zip locks. All you have to do is add some seasoning and grille.

this sounds like a great way to put up straps... got to score some bacon... two backstraps in my frig that need to be put up soon.
