At the risk of talking more bologna. I like the Schwabs chub and the smaller round size smokes pretty good but the blooming deal with some spice on the inside looks good. I smoke everything now days. Wings -home made sausage. I bought a small stuffer and some casings. Been experimenting with sausage for a while now

Any time I fire up the smoker, there's some bologna on it.
Actually prefer Wunderbar from the Walmart deli. Not the all beef....just the regular....but it's been hard to get lately so I've just been using Schwabs.

Like others have said, scored, rubbed with mustard and whatever non-sweet rub I have handy..

Will try SPAM now, too. We use SPAM for fried rice all the time.

Spam always brings back memories of my Boy Scout days as a kid. Our troop was a bunch of poor military brats. We couldn’t afford any fancy butcher cuts/packaging. Generally Vienna Sausages or Spam with a couple cans of pork & beans. Maybe some generic beef stew.
